1 cup heavy cream

½ cup grated Parmesan cheese

2 shallots, finely chopped

2 lemons

2 tablespoons butter

Salt to taste

Freshly ground black pepper to taste

For garnish:

Bring a large pot of salted water to a boil.

Add the pasta and cook until al dente.

Reserve 1 cup of pasta water.

Melt the butter over medium heat.

Add the finely chopped shallots and sauté until softened and fragrant, about 2-3 minutes.

Pour in the heavy cream and bring to a simmer.

Add the grated Parmesan cheese, juice and zest of lemons.

Stir continuously until the cheese is melted and the sauce has thickened slightly.

Taste the sauce and season more if necessary.

Add the cooked pasta to the skillet with the lemon Alfredo sauce.

If the sauce is too thick, add a little of the reserved pasta water to loosen it.
